Christmas Treats at our house

These are a few of the Christmas treats we like to make at Christmas. I have tried to make truffles before but got an improved version this year. I would send them to you all if I weren't afraid they were going to melt. So, sharing the recipe is the next best thing. Sorry there aren't any pictures to accompany this post.

Cocoa Oreo Truffles

one package of oreos (we tried one batch with mint oreos and it was a treat!)
3/4 cup butter
3/4 cup cocoa
1 can sweetened condensed milk
1 teaspoon vanilla extract
1 package of chocolate chips.

Put oreos in a food processor and pulverize them to a fine consistency. Place them in a medium sized mixing bowl and set aside.
Line a cookie sheet with wax paper.
In a heavy 2-quart pan over low heat, melt butter. Add 3/4 cup cocoa; stir until smooth. Add sweetened condensed milk; stir constantly until mixture is thick, smooth and glossy, about 4 min. Remove from heat; stir in vanilla. Pour mixture into oreo bowl and mix thoroughly. Cover and refrigerate 3-4 hours or until firm. Working with a small amount of mixture at a time, shape into 1-inch balls. Place balls on prepared tray; refrigerate until firm. Melt chocolate chips in microwave stirring occasionally until smooth. Dip balls into chocolate and place back on tray. Refrigerate until firm. Store in a tightly covered container in refrigerator.

Wintery White Chex Clusters

1 c. white vanilla baking chips
9 c. Chex in any combination
2 c. salted dry roasted peanuts
2 c. small pretzel twists
2 c. mini marshmallows
1 pkg. (20 oz.) vanilla flavored candy coating
Place vanilla chips in freezer to chill. In large bowl, mix cereal, peanuts, pretzels and marshmallows. Set aside. Microwave candy coating on high 1 min. 30 seconds. Stir, breaking up large chunks. Microwave about 30 seconds longer or until it can be stirred smooth. Pour over cereal mix, gently stirring to coat evenly. Stir in chilled chips. Spread on waxed paper to cool. Break into chunks. Store in an airtight container in refrigerator.
